Warm Buckwheat Flex Cereal With Fresh Toppings

  • 1 cup Buckwheat flex
  • 1 cup warm milk or curd (yogurt)
  • Fresh fruits (such as berries, banana slices, or apple chunks)
  • Nuts (such as almonds, walnuts, or cashews)
  • Seeds (such as chia, flax, or sunflower seeds)
  • Sweetener (optional, such as honey or maple syrup)
  1. Prepare the base:
    Start by heating your milk or curd until it’s warm, but not boiling. Pour it into a bowl, and then add the buckwheat flex.
  2. Combine the ingredients:
    Stir the buckwheat flex into the warm milk or curd until it’s fully mixed. The warmth of the liquid will help soften the buckwheat, making it easy to absorb the flavors.
  3. Add toppings:
    Top your warm buckwheat flex with a generous selection of fresh fruits. Consider using a mix of berries for sweetness, banana slices for creaminess, or apple chunks for a crisp texture. Next, sprinkle some nuts for added crunch and protein, and toss in a handful of seeds for an extra nutritional boost.
  4. Optional sweetness:
    If you prefer a sweeter dish, drizzle a little honey or maple syrup over the top. This adds a natural sweetness that complements the nutty flavor of the buckwheat.
  5. Serve immediately:
    Once your cereal is topped to your liking, serve it immediately while it’s still warm. Enjoy the comforting and nutritious meal that’s packed with vitamins, fiber, and healthy fats.

VeganPro Bara (Traditional Nepali Pancake)

  • 1 cup VeganPro (plant-based protein powder)
  • 1.5 cups water (adjust as needed for consistency)
  • 1 small tomato, finely chopped (optional)
  • 1 small onion, finely chopped (optional)
  • Spices of your choice (optional: turmeric, cumin, chili powder, garam masala, etc.)
  • A few drops of oil or vegan butter for cooking
  • Prepare the batter:
    In a mixing bowl, combine the VeganPro with water at a ratio of 1:1.5. Stir well to create a smooth, lump-free batter. If you prefer a thicker or thinner consistency, you can adjust the water slightly. The batter should be pourable but not too runny.
  • Add flavor:
    For a savory touch, you can mix in finely chopped tomatoes and onions to the batter. These add a delightful freshness and texture to your Bara. You can also add your favorite spices to enhance the flavor—try turmeric for color, cumin for earthiness, or a pinch of chili powder for heat. Mix everything thoroughly.
  • Preheat the pan:
    Heat a non-stick pan over medium flame. Add a few drops of oil or vegan butter to the pan. Let the oil heat up, but make sure it doesn't get too hot or start smoking.
  • Cook the Bara:
    Pour a ladleful of the batter into the pan and gently spread it out into a circular shape, about 3-4 inches in diameter. You can make the Bara larger or smaller based on your preference.
  • Flip and cook both sides:
    Let the Bara cook for about 2 minutes on the first side, or until it turns golden brown and forms a crisp edge. Once the bottom is cooked, carefully flip the Bara over using a spatula and cook the other side for another 2 minutes until golden brown as well.
  • Serve and enjoy:
    Once both sides are crispy and golden, remove the Bara from the pan and place it on a paper towel to absorb any excess oil. Serve hot with chutney, pickles, or a side of your favorite dipping sauce.
